Broccoli & Cauliflower Soup

I ended up with a surplus of broccoli, cauliflower, and carrots; Soup is a wonderful way to use up an excess of veggies quickly, and it freezes well!

  1. Finely chop Broccoli, Cauliflower, and Carrots. (I ran them through a quick chop in my ninja.)

  2. Boil Veggies in water and chicken bouillon or veggie stock if you prefer. (about 10 minutes)

  3. In another pot make a roux (butter and flour), add garlic salt, pepper, and milk.

  4. Stir roux into veggie mix - Add whatever cheese you like or have on hand. (if it’s not thick enough, then make and add another batch of roux.)

As you can see from my recipes, there are no measurements. That's because I don’t measure, and you don’t have to either. I use what I have available. I don’t skip a recipe because I'm short on an ingredient. I also don’t specify quantities because my tastes won’t be yours. Adding seasonings in the measure that you like is the best way to make a meal that your family will eat.
